Our organic vegetables
At Beef Steakhouse, we’re convinced that the quality of the products we serve is the basis of a totally successful culinary experience. That’s why, right from the start of our first restaurant, we chose to give priority to fresh, local produce to guarantee optimal quality and authentic flavor.
Our values
One of the most important things for us was to have the same forward-looking values as our employees. That’s why we chose a local farm less than an hour from Paris, and one that is ecologically responsible with a low carbon footprint. Producing organic and, above all, seasonal vegetables.
Our vegetables are grown on a farm in Provins, Seine-et-Marne. This proximity enables us to benefit from a weekly supply, so we can guarantee the freshness of our produce and therefore of our dishes.
The vegetables are grown in underground greenhouses and gardens, ensuring a constant harvest all year round, even when the weather doesn’t necessarily allow it. Greenhouse cultivation protects and promotes vegetable growth.
Sustainable agriculture
The farm where we source our produce functions as a veritable ecosystem, a sustainable and enriching virtuous circle for the earth. In fact, the fertilizers we use are made from natural waste: compost made from vegetable and fruit peels, eggshells and llama manure.
Llama manure was chosen because it is considered to be particularly rich in essential nutrients such as nitrogen, phosphorus and potassium, which are necessary for plant growth. It helps improve soil structure by increasing its water-holding capacity and promoting good aeration.
Unlike some other manures, which must be composted before use to avoid burning plants with excess nitrogen, llama manure can often be used directly without prior composting. Using llama manure is also a way of adding value to a by-product of llama farming, thus contributing to more sustainable resource management.
What’s more, compared with other types of manure, llama manure has a milder odour, making it more pleasant to handle and use in gardens near residential areas. It also helps to destroy weed seeds and pathogens.
Llama manure is therefore an excellent, natural and effective choice for enriching the soil.
Our recipes
Our chef Daniel Renaudie is in charge of developing unique, delicious recipes that perfectly enhance the vegetables we receive. Whether in salads, purées, burgers or roasted in the oven, you’re sure to enjoy them.
Our collaboration with this farm also enables us to source honey and eggs, which we also incorporate into our recipes.
