However, finding the best meat suppliers is no easy task. That’s why we have a rigorous process in place to ensure that our customers get the best possible cuts of meat. Here’s how we select meat suppliers for the Beef Restaurant.
A quality process: blind testing
Our meat quality testing process is simple but rigorous. We test the meats blind to avoid any bias or personal preference. In one plate, we place the piece of beef from our current supplier, and in the other, we place the piece of meat from our supplier to be tested. Only our chef, Daniel Renaudie, knows which meat is ours.
Together, we test different cuts of meat, such as flank steak, tenderloin and entrecôte. We analyze the meat’s tenderness, juiciness and taste. We also assess meat color, texture and fat. We take all these characteristics into account to ensure that every piece of meat we serve is of the highest quality.
